Pumpkin Bread Muffins

Ingredients

2 1/2 cups of flour

1 cup of quick cook oatmeal

1 cup of sugar

1 teaspoon of cinnamon

1/2 teaspoon of allspice

1/2 teaspoon of freshly ground nutmeg

1 teaspoon of baking soda

2 teaspoons of baking power

1/2 teaspoon of salt

1/2 cup of raisins

1/2 cup of walnuts

1/2 cup of dried banana chips

1/2 cup of shredded coconut

1 cup of Libby easy pumpkin pie mix

1/2 cup of vegetable oil

1/2 cup of unsweetened applesauce

2 large eggs

3 table spoons of sunflower seeds ( sprinkle on top)

Direction

Preheat oven to 350 degrees F.  Grease two 8×4 inch loaf pans or use muffin paper ( I usually find them at home goods)

Mix all ingredients together, mixing well to make sure all of the flavors are well blended.

Bake 38-42 minutes for loaf pans.  Individual muffins will take less time.  Check on occasion with a tooth pic.

I developed this recipe with substitutions ……and it came out amazing… I hope you will enjoy…
